Monday: Beans and Sausage. This should be simple, because the beans are already cooked and frozen (I make a big batch and then family-sized portions), and the sausages are leftover from the sausage sandwiches I made last night. I'd also like to make a loaf of bread from the cookbook Healthy Bread in Five Minutes a Day
Tuesday: Usually Tuesday is strictly Taco Tuesday, but we have so many leftover enchiladas in the freezer from a holiday party that we'll go ahead and eat those instead.
Wednesday: Tuna Pasta (basically this recipe, but I don't add anchovies)
Thursday: Pizza. I'd rather make another batch of homemade dough than go to Costco this week to buy their 4-pack of frozen cheese pizzas. One batch makes 4 doughs, so I'll use one and individually wrap and freeze the other three for future use.
Friday: Mac 'n cheese from the box! And popcorn later that evening when we have our family movie night.
Saturday: Saturday nights are Burger Nights, and this week I'll use the pre-cooked chicken burger patties that have been sitting in our freezer for 9 months. I tend to be pretty cavalier about using old frozen food because there's no risk of it having spoiled and by using a vacuum sealing FoodSaver
Sunday: Beef and Guiness Stew. On Sundays we have an "Around the World" theme, and I try to cook a dish from another country (or a classically American dish) and then put on some music from the same region of the world. This recipe's from Ireland, and it's a new one for me, from The Gourmet Slow Cooker
What's your menu plan this week?
